Tropical Quinoa Salad with Dried Papaya & Passion Fruit

A fresh, colourful salad with a tropical twist.
This quinoa bowl combines creamy avocado, crunchy vegetables, herbs and sweet dried papaya with a little tang from dried passion fruit.
It’s an easy healthy lunch that is naturally vegetarian, vegan-friendly and perfect for meal prep.
Ingredients
Serves 4
Salad
1½ cups cooked quinoa
1 avocado, diced
1 cucumber, chopped
1 cup edamame beans
Fresh coriander
¼ cup pumpkin seeds
50g dried papaya, chopped Papaya • Soft Dried
20–30g dried passion fruit Passion Fruit • Soft Dried
Lime Ginger Dressing
3 tablespoons olive oil
Juice of 2 limes
1 teaspoon fresh ginger, grated
1 tablespoon honey (or maple syrup for vegan)
Salt and pepper
Method
→ Cook quinoa according to packet instructions and allow to cool.
→ Add quinoa, avocado, cucumber, edamame, coriander, pumpkin seeds, dried papaya and dried passion fruit to a bowl.
→ Mix together the dressing ingredients.
→ Pour over the salad and gently combine.
→ Allow to sit for 10 minutes before serving so the flavours come together.
Vegetarian & Vegan Option

✅ Vegan, simply replace honey with maple syrup or agave.
Fruit Tropics Tip
For extra protein, add chickpeas, tofu or grilled chicken.
Dried papaya adds a soft chewy sweetness, while dried passion fruit gives a bright tropical flavour.
Add the dried fruit just before serving to keep the best texture.
