Tropical Mexican Quinoa Bowl with Dried Pineapple

This Mexican-inspired quinoa bowl combines roasted sweet potato, black beans, avocado, fresh herbs and dried pineapple with a zesty lime chilli dressing.
The sweet pineapple pairs beautifully with smoky spices, creating a balanced bowl that is fresh, filling and full of flavour.

Ingredients
Serves 4
Quinoa Bowl
1½ cups cooked quinoa
1 large sweet potato, cubed
1 cup black beans, drained and rinsed
1 cup corn
1 avocado, sliced
Fresh coriander
½ cup dried pineapple pieces, chopped
Optional: sliced jalapeño or chilli flakes
Lime Chilli Dressing
3 tablespoons olive oil
Juice of 2 limes
1 teaspoon honey or maple syrup
½ teaspoon smoked paprika
½ teaspoon chilli powder
Salt and pepper
Method
Preheat oven to 200°C.
→ Toss sweet potato with a little olive oil, smoked paprika, salt and pepper.
→ Roast for 25–30 minutes until golden and tender.
→ Prepare the quinoa and allow it to cool slightly.
→ Add quinoa, roasted sweet potato, black beans, corn, avocado, coriander and dried pineapple to bowls.
→ Mix together the lime chilli dressing and drizzle over before serving.
→ Finish with extra coriander and chilli if desired.

✅ Vegan — simply use maple syrup instead of honey.
For extra protein, add:
→ Grilled tofu
→ Extra black beans
→ Roasted chickpeas
→ Grilled chicken (non-vegan option)

Add the dried pineapple just before serving so it keeps its lovely chewy texture.
