No-Bake Freeze-Dried Mangosteen Cheesecake

If you've never tried mangosteen before, this is a beautiful place to start.
Known as the "Queen of Fruits" in Thailand, mangosteen has a naturally sweet, delicate flavour with hints of peach, citrus and lychee.
Fresh mangosteen is delicious, but it can be difficult to find outside tropical countries and is only available for a limited season.
That's where freeze-dried mangosteen comes in.
It captures the fruit's unique flavour, natural colour and aroma, making it easy to enjoy this special tropical fruit all year round.
Why Use Freeze-Dried Mangosteen?
Cheesecake is the perfect dessert for freeze-dried fruit.
Unlike fresh fruit, freeze-dried mangosteen:

For the best result, crush the freeze-dried mangosteen into a powder or small pieces before mixing through the filling.
Ingredients
Base
200g plain biscuits (digestive-style biscuits work well)
80g melted butter
2 tablespoons shredded coconut (optional)
Filling
500g cream cheese, softenedMongosteen • Freeze-Dried
¾ cup icing sugar
1 teaspoon vanilla extract
300ml thickened cream
25g freeze-dried mangosteen, crushed
2 tablespoons lemon juice
To Finish
Extra crushed freeze-dried mangosteen
Coconut flakes (optional)
Method
→ Line a 20cm springform cake tin with baking paper.
→ Crush the biscuits into fine crumbs and mix with melted butter and coconut.
→ Press the mixture firmly into the base of the tin and chill for 30 minutes.
→ Beat the cream cheese, icing sugar and vanilla until smooth.
→ Whip the cream until soft peaks form, then fold into the cream cheese mixture.
→ Add the crushed freeze-dried mangosteen and lemon juice. Mix gently until combined.
→ Spoon the filling over the biscuit base and smooth the top.
→ Refrigerate for at least 6 hours, preferably overnight.
→ Before serving, sprinkle with extra crushed freeze-dried mangosteen.

✓ Freeze-dried mangosteen is naturally delicate, so add it gently at the end of mixing to keep its flavour and colour.
✓ For an extra special finish, crush a little freeze-dried mangosteen over each slice just before serving. It adds a beautiful pop of colour and a fresh tropical aroma.
