A Tropical Twist on Lamington Slice

There's something comforting about a classic lamington.
This easy slice version keeps everything we love, soft vanilla sponge, rich chocolate icing and plenty of coconut, with one simple tropical twist.
Finely chopped dried mango adds little bursts of natural sweetness throughout the cake without changing the light texture that makes lamingtons so good.
Perfect with a cup of tea, for lunchboxes or whenever you're in the mood for a homemade treat.
Ingredients
Slice
125g unsalted butter, softened
¾ cup caster sugar
1 teaspoon vanilla extract
2 eggs
1¼ cups plain flour
1¼ teaspoons baking powder
½ cup milk
40g dried mango, finely chopped (we used Tan Tan Mango • Soft Dried)
Chocolate Icing
¾ cup icing sugar
2 tablespoons cocoa
⅓ cup boiling water
20g melted butter
To Finish
1 cup shredded coconut
Method
→ Heat the oven to 160°C and line a 20 × 30cm slice tin.
→ Beat the butter, sugar and vanilla until light and creamy.
→ Beat in the eggs one at a time.
→ Fold through the flour and baking powder, then stir in the milk.
→ Fold through the chopped dried mango.
→ Bake for 20–25 minutes, or until a skewer comes out clean.
→ While still warm, cut into squares.
A Few Tips
✓ Chop the mango quite finely so it spreads evenly through the cake.
✓ Pour the icing over while the slice is still warm, it soaks in beautifully.
✓ Enjoy fresh or store in an airtight container for up to 3 days.
✓ Use naturally dried mango with little added sugar for the best flavour. It gives the cake little bursts of real mango without making it overly sweet.
